Because white colored ceiling facilitates better lightening in room through maximum light bounce. Moreover, white paint on ceiling gives it a infinite look as if the stretch of your ceiling is unending. Yet if you are willing to experiment then probably go with the shade of the walls or use a paint contrasting the color of walls. In fact going with light shades is preferable rather than dark colors.
